Combine carrots, ginger, garlic, and broth in a pot.
Bring to boil and cook for about 10 minutes.
Then allow to simmer for 5 minutes.
Sauté the chopped onions in a pan.
Pour the cooked mixture and the sautéed onions into a blender.
Blend until smooth.
Add the coconut milk and seasonings, allow to simmer for 10 minutes over low heat.
Stir well and serve.
